Ingredients

5g KetoCal 4:1 Powder - Vanilla (available on prescription)

7g Butter, unsalted

20g Almonds, flaked and ground

5g Hoosiel Hill Farm icing sweetener

         

Method

1. Use room temperature soft butter for this recipe.

2. Cream butter and icing sweetener with a few drops of vanilla extract, (you can use almond extract, orange zest, lemon zest, pinch of ground cinnamon, or ground ginger).

3. Add ground almonds and KetoCal powder, and mix until you have a soft dough, chill in fridge for 30 minutes.

4. Line a cookie sheet or baking tray with baking paper.

5. Cut dough into 4 and roll into smooth balls, place on a cookie sheet, and press down slightly (you can make bigger or smaller biscuits as needed).

6. Bake at 170oc for 8/10 minutes until the tops are a golden brown. If you make bigger or smaller biscuits adjust timing to suit.

7. Cool on tray then store in a biscuit tin or air-tight container.

8. You can shape biscuits and freeze them until needed, when baking add a few minutes to cooking times.
