Ingredients

35g Banana flesh 

3g Blueberries

8g Oil (e.g. coconut or olive)

45g Tesco double cream

6g Tesco roasted pistachios without shells 

Method

1. Weigh all ingredients accurately.

2. Slice weighed banana down the middle.

3. Heat just under half the oil in a frying pan, add banana and fry until brown and soft.

4. Whisk double cream.

5. Crush pistachios.

6. Place fried bananas on plate, add whipped cream, blueberries and crushed pistachios on top.

Top Tip

Drizzle some keto-friendly chocolate sauce on top to finish. This would need to be calculated individually as it will change the ratio and macronutrient content.
