Ingredients

70g Eat Water Slim Noodles 

30g Courgette, raw

30g Aubergine, raw

20g Spring greens, raw

10g Spring onions, bulbs and tops, raw

10g Oyster sauce

4g Chinese 5 spice

30g Mushrooms, white, raw

26g Oil, olive

 

         

Method

1. Slice spring onions, mushrooms and spring greens.

2. Slice courgette and aubergine with a vegetable peeler. 

3. Fry noodles in hot oil until crispy (if you need a soft texture use just as they are).

4. In the same pan now fry sliced vegetables for 2 minutes.

5. Season with Chinese 5 spice and salt & pepper.

6. Add oyster sauce, crispy noodles and give one last good stir.
