Ingredients

40g Princess corned beef

25g butter

70g raw cauliflower

15g spring onions bulbs and tops raw

20ml double cream

10g cheese

Method

1. Chop up cauliflower florets. Bring a large saucepan of water to boil, then add cauliflower and cook for 5 minutes.

2. Drain cauliflower and tip into a dish.

3. Mash with 20g butter and cream.

4. Pan fry corned beef with spring onion in 5g butter for 1 minute.

5. Plate corned beef on top of mash and sprinkle with cheese.
