Ingredients

25g Corned beef, canned

8g Spring onions, bulbs and tops, raw

30g Mushrooms, white, raw

40g Swede, flesh only, raw

10g Pepper, capsicum, green, raw 

5g Mushroom, dried

20g KetoCal 4:1 Powder - Unflavoured (available on prescription)

          

Method

1. Soak dried mushrooms in 150mls of boiling water and allow to stand for 10 minutes. Once cooled chop finely.

2. Slice mushrooms, onions, swede and pepper into bite size pieces. Dice corned beef and place into a baking dish.

3. Add 100mls of mushroom soaking liquid, cover with foil and bake at 170C for 20 minutes until swede is soft.

4. Mix KetoCal powder with remaining mushroom liquid and add to dish. Stir and season with salt and pepper.

5. Place foil back on and bake in the oven for 10 minutes.

6. Serve or allow to cool and chill and freeze until needed.
