Ingredients

100g chicken, dark meat, raw

15g spring onions bulbs and tops, raw

25g yellow pepper, raw

45g mushrooms, raw

30g pineapple juice

40g rice bran oil

15g Amoy light soya sauce

12g tomato ketchup

12g vinegar

30g Ketocal 4:1 powder (available on prescription)

10g Sukrin sweetener

Method

1. Cut chicken into small pieces.

2. Trim and chop spring onions. Slice yellow pepper and mushrooms.

3. Pour pineapple juice into a jug and add water to approx.100mls.

4. Add sweetener, vinegar, soya sauce and tomato ketchup to jug and stir.

5. Heat oil. Add mushrooms and fry for 5 minutes.

6. Add chicken and cook until white (approx. 5mins).

7. Add spring onions and pepper and cook for a further 5 minutes, stirring constantly so that chicken doesn’t burn.

8. Pour contents of the jug into pan. Boil for a few moments.

9. Add Ketocal powder, mix and remove from the heat.
