Remove skin from chicken and keep to one side. 2. Chop cheese into 2 cubes. 3. Dice up chicken and add to bowl of a food processor. 4. Add egg white and KetoCal to chicken and season with salt and white pepper, process until you have a smooth paste. 5. Divide mixture into 2 portions and with wet hands flatten to roughly 4-inch circle. Place 1 mozzarella cube in the centre, bring chicken around cheese to form a ball. 6. Roll in your hand until smooth, repeat with second portion. 7. Wrap chicken skin around to completely cover the Kiev. 8. Brush with olive oil and place on a baking sheet and season with salt. 9.
