Ingredients

90g Chicken, dark meat, raw

40g Eggs, chicken, white, raw

20g KetoCal 4:1 Powder - Unflavoured (available on prescription)

20g Cheese, Mozzarella, fresh

5g Oil, olive

         

Method

1. Remove skin from chicken and keep to one side. 

2. Chop cheese into 2 cubes.

3. Dice up chicken and add to bowl of a food processor.

4. Add egg white and KetoCal to chicken and season with salt and white pepper, process until you have a smooth paste.

5. Divide mixture into 2 portions and with wet hands flatten to roughly 4-inch circle. Place 1 

mozzarella cube in the centre, bring chicken around cheese to form a ball.

6. Roll in your hand until smooth, repeat with second portion.

7. Wrap chicken skin around to completely cover the Kiev.

8. Brush with olive oil and place on a baking sheet and season with salt.

9. Bake at 170oc for 15/20 minutes until fully cooked through and chicken skin is golden brown and crispy (you can also shallow fry or use your air frier).
