Ingredients

20g Prawns, standard, purchased cooked

25g Lettuce, average, raw

10g Cucumber, raw, flesh and skin

19.5g Mayonnaise, standard, retail

10g Heinz Tomato Ketchup No Added Sugar and Salt 

35g Avocado, average, flesh only

2.5ml KetoCal 4:1 LQ - Unflavoured (available on prescription)

3g Lemon juice, fresh

1.5g Worcestershire sauce

         

Method

1. In a bowl, mix mayo, KetoCal and tomato sauce with lemon juice and Worcestershire sauce; season with salt and pepper.

2. Chop avocado and cucumber into small diced cubes and mix into sauce.

3. In a serving glass, place shredded lettuce on the bottom and add avocado mixture on top. 

4. Arrange cooked prawns on top. 

5. Serve straight away or chill in the fridge until needed.  

Top Tip

Great as a starter for a Christmas meal. Can be eaten as part of a buffet or lunch box.
