Ingredients

18g oil (measure 4.5g into 4 muffin tins)

35g whole egg raw, beaten

30g double cream

5g plain flour

Splash of water

Pinch salt

Method

1. Heat oil in the oven (180 degrees)

2. Whisk all the other ingredients together well and divide between the 4 muffin tins.

3. Cook in the oven for approximately 10 to 15 mins until well risen.

NB the secret to keep them risen is once cooked turn off the oven and leave them in the oven with the door slightly open.
