Ingredients

30g Potatoes, old, boiled in unsalted water, flesh only

55g Chicken, dark meat, raw

100ml Sainsbury’s coconut milk (canned) 

8g Gia tomato puree

70g Tomatoes, canned, whole contents

20g Chickpea (canned and drained) 

43ml Liquigen (available on prescription)

30g Oil, olive

22g Sweetcorn kernels, canned in water, drained

26g Onions, raw

18g KetoCal 3:1 Powder (available on prescription)

2g Curry powder 

Method

1. Heat olive oil in a pan.

2. Add onions and cook until softened.

3. Add tinned tomatoes, tomato puree and curry powder.

4. Once oil separates from tomatoes, add chicken, chickpeas, sweetcorn and boiled potato.

5. Once the chicken is cooked, add coconut milk and turn heat off.

6. Cool and blend along with KetoCal and Liquigen.

7. Add water if needed.
