Ingredients

360g cauliflower, boiled

80g butter

60g ground almonds (Tesco)

250ml Almond Breeze Unsweetened Long-life Drink

120g cheddar cheese

5g wholegrain mustard

Method

1. Grate cheese.

2. Melt butter in a saucepan on the hob.

3. Add almond milk and stir with a wooden spoon while still on the hob.

4. Add ground almonds and bring to the boil, reduce to simmer for 5–10 mins until thickened.

5. Take off the hob and add grated cheese while the sauce is hot.

6. Portion cauliflower (90g per portion) into 4 small oven proof pots.  

7. Pour over sauce (divide evenly between the 4 pots).

8. Add the rest of grated cheese on top.

9. Place under a grill to brown the cheese slightly (be careful not to burn) or place in the oven for approximately 5 minutes so cheese melts.  

Top Tips

Sprinkle with a teaspoon chopped parsley or teaspoon chopped chives. 

You can divide recipe into 5 or 6 portions for smaller meals.

Can be kept in the freezer for 4 weeks.
